In the old days, in taverns, you paid a small fee to shelter from the rain and find refuge: this was the so-called ‘coperto’, which allowed travellers to eat their own food under cover.

Today, however, we have decided to hang up our armour and sheathe our sword. We prefer not to charge you for shelter, for the napkin, or for the chairs and tables. We have chosen to break away from centuries-old tradition. Here, you pay only for what you order, because we believe this is the true evolution of hospitality. Welcome to the present!

Food allergens

We apply the HACCP system for food safety and consumer protection in accordance with Regulation (EC) No 852/2004, and we implement the DVR (Risk Assessment Document) for occupational safety and worker protection in accordance with Legislative Decree No 81/2008. We also implement an allergen management procedure in accordance with Regulation (EC) No 1169/2011.

The allergen register is available on request. Some products may be deep-frozen at source or frozen on-site (using rapid cooling) as described in the Hygiene Self-Monitoring Manual in accordance with Regulation (EC) No 852/04

  11. Sesame: both as whole seeds (e.g. for coating bread and biscuits) and used as an ingredient or derivative, present even in minimal traces (sometimes mixed into flours and seasonings);
  12. Sulphur dioxide and sulphites (SO₂): in concentrations exceeding 10 mg/kg or 10 mg/l (typically present as preservatives in tinned fish products, pickled products, products preserved in oil or brine, jams, vinegar, dried mushrooms, soft drinks, fruit juices, etc.);
  13. Lupins: present as an ingredient, even in minute quantities, or in derived products (due to their high protein content, they are often included in the preparation of industrial and non-industrial vegan products, such as vegan burgers and cold cuts, flours and similar items);
